Once you make these breakfast cookies, you are never missing your breakfast, that's for sure. You can grab them on the go! And they are so yummy, you can also have them for dessert. Just warm them a little in the microwave and serve with some vanilla ice-cream.

You can pretty much use any cereal of your choice. I have used clusters for this recipe, which worked out great and gave the cookies nice crunch! Go wild and experiment with your favourite cereal.

Since they are somewhat healthier than your standard chocolate chip cookies, you feel less guilty eating these! 😆

  • Cook Time: 15-20 minutes or until slightly golden brown on the edges
  • Cook Temperature: 180°C (356F)
  • Makes: 12 Cookies

  • 200 g All-purpose flour
  • 3/4 tsp Baking Soda
  • 1/2 tsp Salt
  • 150 g Butter (at room temperature)
  • 1/2 Cup Brown Sugar
  • 1/2 Cup Sugar
  • 2 Egg
  • 1 tsp Vanilla Extract
  • 150 g Chocolate Chips (Optional)
  • 300 g Cereal

  • Pre-heat your oven at 180°C (356F).
  • Weigh up your dry ingredients, all-purpose flour, baking soda and salt in a bowl.
  • Transfer the butter in a microwavable bowl and completely melt it.
  • Add the brown and standard sugar to your melted butter and combine.
  • Then add eggs and vanilla extract to the butter and sugar mix and give everything a nice mix.
  • Once the wet mix is all combined with no lumps, slowly add the dry flour mix in parts and fold it in, until a smooth batter mix consistency is achieved.
  • Then add the chocolate chips and cereal and gently give everything a mix.
  • If you have patience, chill the mix for 15-20 minutes.
  • Then grab a lined tray and portion the dough into 12 equal parts.
  • Shape the dough into flat round cookies and bake until the edges turn slightly golden brown. If you want to make them crunchy, keep baking for longer, but keep an eye on them, so they don't burn.
  • Once baked, cool them down on a wire rack. Enjoy!
  • Happy Baking!!
