Let's make my favourite lazy day - Paneer (Cottage Cheese) recipe called 'Paneer Bhurji'. 'Bhurji' is basically scrambled something, so 'Paneer Bhurji' means scrambled cottage cheese.

I like this recipe because it is super quick to make and takes least amount of effort, if you are feeling like home cooked food and don't want to spend hours in the kitchen!

You would usually have paneer bhurji with roti (chapati/fulka) aka Indian flat bread, but I do enjoy eating it with rice as well.

Ingredients

  • 360g Paneer (Cottage Cheese)
  • 2-3tbsp Vegetable Oil
  • 1/2tsp Coriander Seeds
  • 1/2tsp Black Pepper Seeds
  • 1tsp Cumin Seeds
  • 1 Medium Onion
  • 1 Medium Tomato
  • 1tbsp Green Chili
  • To Taste Salt
  • 1/2tsp Turmeric Powder
  • 1 tsp Garam Masala
  • 1tsp Red Chilli Powder
  • Handful Fresh Coriander

Steps

  • Start by prepping the paneer, I am using export quality paneer, dice into 1-2cm cubes and set aside. If your paneer is not soft, dice the paneer and add hot water to it and let the paneer sit for 10-15 minutes, to make it soft.
  • Then dice your onion and tomato. And slice the green chili.
  • In a pot, add vegetable oil and turn the heat to high.
  • Add the whole spices - coriander, black peppercorn and cumin seeds to the hot oil and cook until fragrant or roughly a minute or 2.
  • Then add the diced onion to the pot and cook until slightly cooked. You don't have to caramelise the onion, just a little golden colour is what you are after.
  • Once your onion is ready, add diced tomato, sliced green chili, turmeric, garam masala, salt, chilli powder, and give everything a mix. Reduce the heat to low, close the lid and cook for about 10 minutes.
  • Then add paneer. After 2-3 minutes, your paneer should start crumbling nicely. Cook for another 5 minutes after crumbling the paneer. Adjust the salt if required. Turn the heat off.
  • Roughly chop some fresh coriander and add to the bhurji and mix everything well. Enjoy with a roti! 😊
