This is not your usual banana bread, it is premium banana chocolate bread, that will melt in your mouth and your taste buds will thank me for it. My raging lactose intolerance wouldn’t let me have much butter, hence why I switched to vegetable oil. This bread is dairy free and egg free, you can use Vegan Chocolate to make it completely VEGAN!

After perfecting this recipe, I genuinely don't think eggs are required in any banana bread! It’s crazy how fluffy this recipe comes out, by only using Baking Soda and Apple Cider Vinegar in combination instead of eggs! Love science!! Try it & believe it!

PS: Thanks to basically all the basic as cafes, for having only super dense energy balls!! And no nice options to have with my long black, so I have to go bake my own treats!

Recipe

  • Prep Time: 15-20 minutes
  • Bake at: 180°C (356°F) for 60-65 minutes
  • Servings: 8

Ingredients

  • 2 Cups All-purpose Flour
  • 3 tsp Baking Soda
  • 2 tsp Baking Powder
  • 3/4 tsp Salt
  • 1/2 tsp Nutmeg 
  • 1 tsp Cinnamon Powder 
  • 3/4 Cup Brown Sugar
  • 1/2 Cup Neutral Vegetable Oil
  • 2 tsp Vanilla Extract
  • 2 tbsp Apple Cider Vinegar (or White Vinegar)
  • 4 Large Ripe Bananas mashed
  • 3/4 Cup Walnuts roughly chopped
  • 125g  Dairy Free Chocolate Drops or roughly chopped (I used Whittaker's 50% dark)
  • 2 tbsp Maple Syrup

Steps

  • Start by preheating the oven to 180°C (356°F).
  • Roughly chop the walnuts (keep a few aside to put on top) and chocolate block and keep aside.
  • To make the dry mix, in a medium sized bowl, combine all-purpose flour, baking powder, baking soda, salt, cinnamon powder, nutmeg powder and give everything a mix.
  • Peel the ripe bananas, add to a separate bowl and mash them, a few lumps are fine, don’t need to make a smooth slurry.
  • Make the wet mix a large bowl, add oil, brown sugar, apple cider vinegar and vanilla extract and mix until there are no lumps and it gets a caramel sauce like consistency.
  • Combine mashed bananas with the wet mix and then add the dry mix, 1/3rd at a time and fold gently, untill all dry mix is well combined. Then add the chopped walnuts and chocolate and fold in gently.
  • Transfer to a lined 8½x4½" loaf pan.
  • Bake for about 60 mins or until the tooth pick comes out not gooey but slightly sticky.
  • Pour the maple syrup on the top and evenly spread it with a brush.
  • Let the bread cool down completely, then slice and enjoy with a cup of tea or coffee. Enjoy! 😊🍞
