Crispy on the outside and soft and creamy 'masaledar' inside! Masaledar means flavored with spice, hence, these polenta fries are perfect snack for people who enjoy flavours!!

I know we all love potatoes🥔♥️ of all shapes and kinds, but I love having variety in my food and I just love these! Polenta is basically cornmeal (type of ground corn), so no issues if you have gluten-intolerance. Also, polenta is relatively low in calories and fat compared to potato fries. So it’s a win-win situation for everybody. 😄

Tip: You can store these raw cut fries in the freezer in an air tight container for later! All you have to do is, once you have cut the polenta into thick fries, store them and you can bake them straight away from frozen, until you get the crispy crunchy golden brown outside and soft inside.

Recipe

  • Prep Time: 10 minutes
  • Total Time: 1 hour 30 minutes
  • Serves: 4-6

Ingredients

  • 4 cups Water
  • 1 cup Polenta (Cornmeal)
  • To taste Salt
  • 1/4 tsp Black Cracked Pepper
  • 1 tsp Garam Masala
  • 1/2 tsp Kashmiri Red Chilli Powder
  • 1 tsp Garlic Powder
  • 1/2 tsp Onion Powder
  • 1/2 Cup Vegetable Oil, for frying
  • 1 Medium Green Chilli finely sliced
  • 1 tbsp of Fresh Coriander roughly chopped
  • Lemon wedges, for serving

Steps

  • Bring 4 cups of water to a boil in a large sauce pan. Reduce the heat to low, add in the polenta, stirring frequently, continue to cook.
  • Add the garam masala, salt, black cracked pepper, chilli powder, garlic powder and onion powder. Then add fresh coriander and green chilli. Cook until a thick, creamy paste consistency is achieved.
  • Grab a baking tray and line with parchment paper. Transfer the cooked polenta onto the tray and spread it evenly (about 1/2 inch thickness). Allow it to cool (use a fridge if you can to speed up the process) and set in the refrigerator for at least 1 hour, or until firm.
  • If using regular oven, half way into cooling down the polenta, turn your oven on to pre-heat at 220°C (428F).
  • Once the polenta has completely cooled down and set, take it out of the fridge and cut into your desired chunky thickness.
  • Use neutral vegetable oil spray to line your air fryer basket or oven tray if using conventional/regular oven. And bake until crispy or golden brown. Should take 30 minutes in the regular oven and about 10-15 minutes in an air-fryer at 190-200°C(392F).
  • Serve with your favourite tomato chutney or simply tomato ketchup. Enjoy! 🥰
