Polenta is basically cornmeal (type of ground corn), so no issues if you have gluten-intolerance. Also, polenta is relatively low in calories and fat compared to potato fries. Tip: You can store these raw cut fries in the freezer in an air tight container for later! All you have to do is, once you have cut the polenta into thick fries, store them and you can bake them straight away from frozen, until you get the crispy crunchy golden brown outside and soft inside.
