This Coconut & Peanut Chutney is my love letter to South Indian cuisine! It's creamy, nutty, spicy, and bursting with flavor. This chutney is incredibly versatile, pairing perfectly with dosa, idli, vada, uttapam - you name it!

It's super easy to make, and the aroma of the 'tadka' (tempering) will fill your kitchen with the most incredible fragrance. Get ready for a flavor explosion!

  • 1 cup Fresh Coconut (or frozen) (small chunks/sliced)
  • 1 cup Peanuts
  • 1 tbsp Coconut Oil
  • 1 tsp Mustard Seeds
  • 1 tbsp or 2 medium Green Chillies (sliced)
  • 1 tbsp Fresh Curry Leaves (7-9 leaves)
  • 1-2 Dried Red Chilli (if want extra chilli flavour)
  • Salt to taste
  • Water to get the desired consistency (should be thick paste/runny)

Steps

  • If using fresh coconut, start by breaking the coconut shell from the middle and carefully taking the flesh out. Cut the coconut flesh into small chunks or slices. Don't waste the coconut water—drink it!
  • Dry roast the peanuts on a hot pan until aromatic and slightly brown. Be careful not to burn them. Let the peanuts cool down completely. Then, rub the peanuts between your hands to remove the peels (this should be easy once they're cooled). Discard the peels. Alternatively, use pre-roasted, unsalted peanuts to skip this step.
  • Transfer the peanuts and coconut to a blender. Add about 1 cup of water and blend until you achieve a thick consistency with no chunks remaining. Add more water as needed to reach your desired consistency.
  • Now, let's prepare the 'tadka' (tempering). In a small pan (a 'tadka pan' works best if you have one), heat the coconut oil. When it's hot, add the mustard seeds. Be careful as they will start popping! Turn off the heat and add the dried red chilies, sliced green chilies, and curry leaves.
  • Pour the aromatic tadka over the blended coconut and peanut mixture. Listen to that satisfying sizzle! Adjust the salt to your taste.
  • Serve your delicious Coconut & Peanut Chutney fresh with your favorite South Indian dishes like dosa, idli, vada, uttapam, or anything else you like. Enjoy!
