This one pot Halloumi bake is perfect meal for days you don't feel like doing too many dishes or as an easy quick meal prep for your weekly lunches, it has all the vegetable and cheesy goodness of halloumi to keep you wanting for more without getting bored of it. It stays good in the fridge in air tight container for at least 3-4 days. I have even tried freezing it and it was equally nice when I defrosted and reheated it.

I do this recipe in my 30cm cast iron, but if you do not own a cast iron, you can use a pan to cook the vegetables on gas/stove and then transfer the cooked vegetables to a baking dish before adding the Halloumi on top to finish off the baking step.

To bulk this recipe even more, I like to add lamb sausage instead of eggplant sometimes, you can add your choice of sausage to make vegan/vegetarian versions.

Serving Suggestion: This recipe goes really well with rice, bread or even on its own, it is filling and satisfying. Definitely my go to for lunch preps.

Ingredients

  • 2 tbsp Oil
  • 1 medium Onion
  • 5-6 Cloves Garlic
  • 1 Cup Courgette
  • 1 Cup Eggplant
  • 1 Cup Mushroom
  • 1 Cup Capsicum
  • 400g Tomato Chopped
  • 130g Tomato Paste
  • 1 tsp Green Chilli (optional)
  • 1 Cup Spinach
  • 2 tsp Salt (to taste)
  • 1/2 tsp Cracked Pepper
  • 1 tsp Oregano
  • 1/2 tsp Chilli Flakes
  • 200g Halloumi
  • 1 tbsp Spring Onion
  • 1 tbsp Parmesan

Steps

  • Start by pre-heating the oven at 200°C for (390F).
  • Roughly chop all the vegetables, if you don't have the vegetables listed in the list, just use any vegetable from your fridge, they will work.
  • Add oil to the cast iron and start cooking your onion until light sautéed.
  • Add chopped garlic and cook for 1 minute, then add the eggplant, mushroom, courgette, capsicum, and cook for 10-15 minutes. You don't want to overcook the vegetable as they are going to go in the oven as well.
  • Then add the chopped tomatoes, tomato paste, green chilli, salt, pepper, oregano, chilli flakes and cook for 5 minutes.
  • While your vegetables are cooking, slice up halloumi and spring onion.
  • Place the halloumi slices on top of the partly cooked vegetables and sprinkle spring onion and parmesan. Add more parmesan if you want to make it more cheesy!
  • Bake at 200°C (390F) for 15-20 minutes or until the top of the bake is slightly charred/golden brown.
  • Serve it just by with a slice of bread or some rice. Enjoy!!!
