Sabzi (cooked vegetables), parantha (fried flat bread) and a glass of chai, my childhood is filled with vibrant memories of different kind of sabzis my mum would make with crispy parantha on a Sunday morning.

'Taazi' sabzi (freshly cooked vegetables) beats butter chicken for me any day. All credit goes to my mum. She would make these simple fresh food and simple rotis or paranthas, that filled my heart with joy.

  • Serves : 4-5 People

Ingredients

  • 2tbsp Oil
  • 1tsp Cumin Seeds
  • 1 Large Onion (roughly chopped)
  • 1 Large Tomatoes (roughly chopped)
  • 1tsp Green Chilli (sliced or diced)
  • To taste Salt
  • To taste Cracked Pepper
  • 1tsp Turmeric Powder
  • 1tsp Kashmiri Red Chilli Powder
  • 2tsp Garam Masala
  • 250g Green beans
  • 250g Potatoes

Steps

  • Start by chopping all the vegetables and putting them aside.
  • Grab a pan and put it on medium to high flame.
  • Add cumin seeds and cook until fragrant or for 2-3 minutes until dark brown.
  • Add chopped onions and potatoes with a little salt and cook for 10-15 minutes on medium to high flame.
  • Add turmeric powder and cook for 2-3 minutes.
  • Add chopped tomatoes and sliced green chilli, give everything a mix, turn the heat to low.
  • Add pepper, Kashmiri red chilli powder and garam masala and cook everything for 5-10 minutes. Adjust the salt to taste.
  • Add the beans and cook for about 10 minutes on medium to high heat.
  • Serve with parantha/roti (flat bread) or some rice. Enjoy! :)
